Rougaille (rougail) is the Creole tomato sauce at the centre of home cooking: thyme, onion, garlic, chilli, tomato, sometimes spring onion. It carries sausage (rougaille saucisse), salted fish, egg, or whatever the house has. If you only eat hotel 'Creole platters', you may meet a polite cousin. The real thing is sharper, more thyme, more chilli, served with rice. Learning to recognise it on a menu is more useful than memorising restaurant names.
