Ourite is octopus, often curry or vinaigrette. It is a genuine coastal protein, not a gimmick, but demand from tourism can press local fisheries. Eat it when it is on a serious Creole menu, not because a beach tout said 'very local sir'. Texture should be tender, not rubber bands. We do not list a 'must-hunt' species or encourage illegal collection. If a stall cannot tell you it is octopus, do not perform curiosity on mystery meat.
