Two biscuits, jam, pink icing

Napolitaine

Editorial interpretation

Napolitaines are a Mauritian pâtisserie, despite the name. Two crumbly biscuits, jam in the middle, a slab of icing — often pink — on top. They sit in bakery cabinets next to gâteaux coco and other island sweets. This is bakery culture, not a restaurant dessert. Buy two. They crumble. Coffee or tea alongside is the local logic. We will not crown a 'best bakery'; look for turnover and a cabinet that is not dusty.

Napolitaines, and whatever else in the cabinet looks like it was made this morning.
