Chilli cakes from yellow split pea

Gâteau piment

Editorial interpretation

Gâteau piment is a split-pea fritter, herbed and chilli-hot, fried in oil that should be fresh enough not to taste of yesterday. The local move is stuffing a few into a buttered baguette — a Mauritian breakfast that tells you more about the island than a hotel fruit plate. You will find them at markets, near bus stations, and in village shops in the morning. Heat level varies. Ask. If they are sitting pale under a lamp at 14:00, walk on.

A few gâteaux piment, or a baguette filled with them if that is how the stall serves breakfast.
