Boulettes

Boulettes are dumplings — often fish — served in broth with chilli vinegar on the side. They are a Sino-Mauritian everyday food, sold from counters where the steam is the advertising. You can make a meal of a bowl. You can also ruin it by asking for a fusion garnish. Chilli sauce is the customisation. If the broth tastes of stock cube and little else, you are in the wrong steam.
