Editorial interpretationAlouda is what you drink when Port Louis is a furnace: cold milk, sweet, with tukmaria (basil seeds) that swell into little pearls. Flavours vary — almond, vanilla, agar jellies in some glasses. It is related to other Indian Ocean and South Asian milk drinks, localised here as a stall classic. Find it near markets and bus stations. If it tastes only of syrup and ice, you have the tourist cousin.
